Yields 8 Servings
Ingredients:
- ½ cup mayonnaise
- ½ cup nonfat plain Greek yogurt
- 2 tbsp vinegar
- 1 tbsp prepared mustard
- 1 tsp sugar
- 1 tsp salt
- ¼ tsp ground black pepper
- 8 oz whole-wheat elbow macaroni or other noodle (cooked according to package directions and drained
- 1 cup celery (sliced)
- 1 cup red bell pepper (chopped)
- ¼ cup finely chopped onion
Directions:
- In a large bowl stir together the mayonnaise, yogurt, vinegar, mustard, sugar, salt, and pepper until smooth. Add the macaroni, celery, green pepper, and onion.
- Stir until everything is well coated with the mayonnaise mixture
- Cover and refrigerate for at least 2 hours to blend flavors
