1/2 cup frozen mango or pineapple

1/2 avocado

1 large handful spinach

1.5 cups soy/almond milk

1/2 tsp vanilla extract

 

Combine all ingredients in a high-speed blender and blend until smooth.

Lemon Chia Oat Energy Bites

2 packed cups pitted Medjool dates

1 cup old fashioned rolled oats

½ cup unsweetened finely shredded coconut + extra for coating

2 tablespoons chia seeds

Zest from 1 lemon

2 tablespoons fresh lemon juice

¾ teaspoon pure vanilla extract

¼ teaspoon ground ginger (optional)

Pinch of sea salt

 

Combine all ingredients in a food processor and run blade until it forms a dough-like consistency. Roll into bite-size pieces and coat in shredded coconut.

Blueberry Cornmeal Drop Biscuits

1 cup all purpose flour

1/2 cup whole wheat flour

1/2 cup cornmeal

2 tsp baking powder

1/2 tsp salt

3/4 cup soy/almond milk

1/4 cup grapeseed oil

1/4 cup maple syrup

1 cup blueberries (or thawed from frozen)

Preheat oven to 450F. Mix dry ingredients. Add in wet ingredients. Mix until just combined and fold in blueberries. Drop into 1/4 cup servings on baking sheet lined with parchment paper. Bake for 12-15 minutes until golden.

Zucchini Eggplant Lasagna

Ingredients:

 

1 large eggplant, cut crosswise into 1/4-inch-thick slices

3/4 teaspoon salt, divided

2 teaspoons olive oil

3/4 cup chopped onion (about 1 medium onion)

3 garlic cloves, chopped

3/4 teaspoon ground black pepper, divided

1/2 teaspoon chopped fresh oregano

1/8 teaspoon ground red pepper

1 (28-ounce) can crushed tomatoes

1 cup fresh basil leaves, chopped

1 cup (8 ounces) part-skim ricotta cheese

1 (8-ounce) package precooked whole grain lasagna noodles

2 medium zucchinis, cut into 1/4-inch-thick slices

2 1/2 cups (10 ounces) shredded part-skim mozzarella cheese


Directions:

  1. Preheat oven to 350°.
  2. Arrange eggplant slices in a single layer on several layers of paper towels. Sprinkle evenly with 1/2 teaspoon salt; let stand 15 minutes.
  3. Heat oil in a large skillet over medium-high heat. Add onion and garlic to pan; sauté 2 minutes, stirring frequently. Add 1/4 tsp salt, 1/4 tsp black pepper, oregano, red pepper, and tomatoes; bring to a boil. Reduce heat, and simmer for 10 minutes, stirring occasionally.
  4. Combine basil, ricotta, and remaining 1/2 teaspoon black pepper in a small bowl. Spread 1/2 cup tomato mixture into the bottom of a 13 x 9–inch baking dish coated with cooking spray. Arrange 4 noodles over tomato mixture; top with half of eggplant and half of zucchini. Spread ricotta mixture over vegetables; cover with 4 noodles. Spread 1 cup tomato mixture over noodles; layer with remaining eggplant and zucchini slices. Arrange remaining 4 noodles over vegetables, and spread remaining tomato mixture over noodles. Top evenly with mozzarella. Cover with foil coated with cooking spray. Bake at 350° for 35 minutes. Uncover and bake an additional 25 minutes or until browned.

No-Bake Dark Chocolate/Peanut Butter Filled Oat Bars

Ingredients:

  • 3 Cups Rolled Oats
  • 1/3 cup ground flaxseed
  • ¼ tsp salt
  • 1/3 cup coconut oil, melted,
  • 1 medium ripe banana, mashed
  • ½ cup honey
  • 1/3 cup milk
  • ½ tsp vanilla

Filling:

  • ½ cup crunchy peanut butter
  • 1/3 cup dark chocolate chips
  • ¼ cup maple syrup

Directions:

In a bowl, combine oats, flax and salt. Make a well in the center and add in coconut oil, banana, honey, milk, and vanilla. Divide the dough in half and press into an 8×8 baking dish. In a separate bowl, mix together the three ingredients for the dark chocolate peanut butter filling. Spread the filling over the dough. Add the remaining oat dough on top of the filling and press flat. Cover and refrigerate for at least three hours.

Protein Pancakes

Yields: 6 pancakes

Ingredients:

 

·        1 1/3 cup old fashioned oats

·        Optional: 1 Tbsp. ground Flaxseed

·        1 tsp baking powder

·        1/2 cup plain greek yogurt (or flavored).

·        2 eggs

·        3/4 cup milk (Almond, skim, soy, rice…)

·        1 tsp olive oil

·        1 tsp vanilla extract

·        Dash of cinnamon

 

 

Instructions:

1.     Add the oats, flaxseed (optional) and baking powder to a blender and blend until fine. Remove and place in a medium bowl.

2.     Add the yogurt, eggs, milk, vanilla, oil and cinnamon into the bowl. Stir until smooth and all incorporated.

3.     Wait 5-10 minutes for the oats to soak up the liquids and create a slightly thicker batter.

4.     Spray pan with non-stick cooking spray and spoon on the batter in desired size. Cook on one side until bubbles appear. Flip pancake and cook until complete.

5.     Serve with peanut butter, fruit and/or syrup. Enjoy!

Crockpot Taco Soup

CROCK POT TACO SOUP

Serves: 6 to 8

Ingredients:

  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can pinto beans, drained and rinsed
  • 1 (14.5 oz.) can petite diced tomatoes, drained
  • 1 (15.25 oz.) can sweet corn, drained
  • 1 (10 oz.) can green enchilada sauce
  • 2 (14 oz.) cans low sodium chicken broth
  • 1 (1 oz.) packet taco seasoning
  • 1 Tablespoon cornstarch + 2 Tablespoons water
  • 1/2-pound lean ground beef

Instructions:

  1. Add all beans, tomatoes, corn, enchilada sauce, chicken broth, and taco seasoning to a large crock pot. Stir to combine. Cover with lid and cook on low heat for 3 to 6 hours. (If you’re leaving this in while at work keep it on the warm setting for 8 hours.)
  2. Mix together the cornstarch and water to create a slurry. Add to the soup in crock pot and stir. This will thicken the soup.
  3. Brown and crumble the ground beef in a large skillet until thoroughly cooked. Drain grease. Add beef to crock pot and stir to combine.
  4. Serve soup warm with shredded cheese, tortilla strips, sour cream…etc. Enjoy!

Acorn squash is the sports utility vehicle of the holidays — stuff it with anything you please🍁🍂❤️

chickpea stuffed squash with balsamic glaze:

2 acorn squash, seeds removedacornsquash

1.5 cups cooked chickpeas

1 small yellow onion

2 cloves garlic

handful baby portobellos, sliced

1 tsp dried thyme

1 tsp dried oregano

balsamic glaze
Bake the squash at 350F 45min until soft.

Heat onion and garlic in skillet until soft. Add mushroom, chickpeas, herbs until heated through. Fill squash and drizzle with balsamic glaze. Serves 4.

Switch it up by filling with soup, stuffing, or cranberry sauce.

1 cup all-purpose flour
½ cup whole-wheat flour
1/2 cup cornmeal
½ cup cranberries
¾ cup canned pumpkin
¾ cup almond milk
¼ cup walnut or olive oil
¼ cup pure maple syrup

Preheat the oven to 450°F. Line a baking sheet with parchment paper.
Mix dry ingredients. Mix wet. Pour wet into dry and mix until just combined.
Drop a large spoonful onto baking sheet until you form 6 scones.
Bake for 12-15 minutes until golden.

* Ingredients

o ½ cup uncooked brown rice

o 24 ounces uncooked, boneless, skinless chicken breast

o Dash salt

o Dash pepper

o 2 teaspoons + 2 tablespoons olive oil, divided

o 1 tablespoon honey

o 3 tablespoons lemon juice (about 1 medium lemon)

o 1 teaspoons Dijon mustard

o ¾ cup chopped celery (about 2 stalks)

o ½ cup diced onion (about ½ small onion)

o 1 ½ cups grams frozen peas and carrots, thawed

o ¼ cup chopped basil

* Directions

o Cook brown rice according to package directions

o Bake or cook chicken in a skillet on the

stovetop with 2 teaspoons olive oil until firm

and opaque throughout

o In a large bowl, whisk together 2 tablespoons

olive oil, honey, lemon juice, and

o Dijon mustard. Add celery, onion, peas and

carrots, and brown rice; toss to coat. Divide

rice mixture into four servings (about ¾ cups

rice mixture). Top each with about 4 ounces

grilled chicken.

Turkey Orzo Soup

* Ingredients

o 1 large white onion

o 4 medium carrots

o 4 medium stalks celery hearts

o 2 tablespoons olive oil

o 4 cloves of garlic

o 1 ½ pounds turkey breast cutlets

o 10 cups chicken broth

o 1 ½ cups dry orzo pasta

o 2 lemons, juiced (about ¼ cup)

o 2 tablespoons chopped fresh parsley

* Directions

o Dice onion, carrots, and celery hearts. You should get about 2 cups diced onion, and 1 ½ cups each of diced carrots and celery

o In a soup pot, add diced vegetables along with 2

tablespoons olive oil and sauté for 5 minutes on

medium heat.

o Mince garlic cloves and add them to the pot, sautéing

for 2 minutes.

o Add in turkey breast cutlets (thinly sliced raw turkey

breast), broth, and dry pasta. Bring the soup to a

simmer, and then allow it to cook for 15-20 minutes.

o Test the orzo pasta for doneness before turning off the

heat. Remove the turkey meat and shred it using

2 forks, and then return it to the pot.

o Add in the lemon juice and fresh parsley. Stir to

combine, and serve hot in 2 cup portions

One Pan Chicken & Roasted Vegetables

Ingredients

  • 1 pound Brussel sprouts, trimmed and halved
  • 1 pound butternut squash, cut into bite-sized pieces
  • ½ medium onion, chopped
  • 1 lemon, thinly sliced
  • 3 large garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon ground pepper
  • 4 chicken thighs (bone-in or boneless)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fennel seeds
  • 1 teaspoon crushed red pepper
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • 4 fresh sage leaves, chopped

Directions

  • Preheat oven to 450˚F. Combine the Brussel sprouts, squash, onion, lemon slices and minced garlic in a large bowl, add 2 tablespoons of oil, balsamic vinegar, salt, pepper, and nutmeg and toss to combine. Spread veggie mixture onto large baking sheet.
  • Combine 2 tablespoons olive oil, apple cider vinegar, fennel seeds, red pepper, paprika, garlic powder, sea salt, pepper and sage in a small bowl. Coat chicken with the marinade and arrange chicken on top of the Brussel sprouts and squash mixture. Bake for 30-40 minutes or until both the veggies and chicken are cooked through. Portion onto plates, squeeze any remaining juice from lemon over each serving and enjoy!

Egg & Hummus Breakfast Wrap

Ingredients

  • 1 whole grain tortilla
  • 1-2 tablespoons hummus
  • 2 large egg
    • Plant-based skip eggs, 1/4c hummus
  • 1/8 cup chopped yellow onion
  • 2 button mushrooms, sliced
  • 2 cups baby spinach
  • 1 tablespoon crumbled feta
    • Plant-based skip eggs, 1T chopped olives
  • 1 tablespoon chopped sun-dried tomatoes

Directions

  • Spray skillet with cooking spray and sauté onion and mushrooms for 3-4 minutes or until fragrant. Add spinach and sauté for a few minutes longer, until spinach has wilted.
  • Add egg and egg whites to pan with veggies and cook for about 2 minutes or until eggs are cooked through.
  • Warm up the tortilla and spread on a layer of hummus. Place the egg scramble in the center of the tortilla and top with sun-dried tomatoes and feta.

Barbecue Chicken Pizza

Ingredients

  • 1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli)
  • 3/4 cup tomato chutney
  • 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
  • 2/3 cup diced plum tomato
  • 3/4 cup (3 ounces) shredded extra-sharp white cheddar cheese
  • 1/3 cup chopped green onions

Directions

  • Preheat oven to 450°.
  • Place crust on a baking sheet. Bake at 450° for 3 minutes. Remove from oven; spread chutney over crust, leaving a 1/2-inch border.
  • Top chutney with chicken. Sprinkle diced tomato, cheese, and green onions evenly over chicken.
  • Bake at 450° for 9 minutes or until cheese melts. Cut pizza into 6 wedges.

Healthy Fettuccine Alfredo

Ingredients

  • 1 tablespoon unsalted butter
  • 1 clove garlic, minced
  • 1 teaspoon grated lemon zest
  • 2 teaspoons all-purpose flour
  • 1 cup low-fat (2%) milk
  • Kosher salt
  • 2 tablespoons Neufchtel or low-fat cream cheese
  • 3/4 cup grated parmesan cheese, plus more for topping
  • 3 tablespoons chopped fresh parsley
  • 12 ounces fresh fettuccine
  • Freshly ground pepper

 

Directions

1. Make the sauce: Melt the butter in a skillet over medium heat. Add the garlic and lemon zest and cook until the garlic is slightly soft, about 1 minute. Add in the flour and cook, stirring with a wooden spoon,1 minute. Whisk in the milk and 3/4 teaspoon salt and cook, whisking constantly, until just thickened, about 3 minutes. Add the Neufchatel and parmesan cheese; whisk until melted, about 1 minute. Stir in the chopped parsley.

2. Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, 2 to 3 minutes. Reserve 1 cup cooking water, then drain the pasta and return to the pot.

3. Add the sauce and 1/2 cup of the reserved cooking water to the pasta and gently toss to combine, adding more cooking water as needed to loosen. Season with salt. Divide among bowls and top with parmesan and pepper.

o 2 whole eggs

o ¼ cup reduced-fat milk

o 1 slice whole-wheat bread, torn into small pieces

o ¼ cup sharp cheddar cheese, shredded

o ¼ cup diced onions (frozen is easiest)

o ¼ cup diced bell peppers (frozen is easiest)

o 1 pinch each of garlic, oregano and crushed red pepper

o Salt and pepper, to taste

Directions

1. Spray an oven-safe glass dish with non-stick cooking spray and preheat oven or toaster oven to 350°F.

2. In a small mixing bowl, beat eggs and milk. Add veggies, cheese and bread and toss to coat.

3. Pour into prepared dish and bake for about 25 minutes, or until top is browned and knife inserted into the center comes out clean.

1. Preheat an outdoor grill for medium heat and lightly oil grate.

2. Season one side of each steak with the Italian seasoning, thyme, rosemary, salt, and pepper.

Peanut Butter Banana Protein Smoothie

Ingredients:

* I frozen banana

* 1 scoop metagenics vanilla protein powder

* ¾ cup almond milk

* ½ cup vanilla Greek yogurt

* 1 tablespoon peanut butter

Directions: place all ingredients in a blender and mix well. Serve immediately!

This is a great post-workout snack filled with carbs and protein to refuel and rebuild muscles!

Grilled Potatoes and Onions

Ingredients

o 4 potatoes, sliced

o 1 red onion, sliced

o 1 teaspoon salt

o 1 teaspoon ground black pepper

o 4 tablespoons butter

Directions

  1. Preheat grill for medium heat.
  2. For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in

the center, sprinkle with salt and pepper, and dot with

butter. Wrap into a flattened square, and seal the edges.

Repeat with remaining potatoes and onion.
